Gazzolo column: Viator will be missed

You remember the one. This person was funny and charismatic. Aloof and independent. Charming and absolutely brilliant.

      When nap time rolled around, this kid would sit there and play rock, scissors, paper with you. The rules didn’t apply to the cool kid.

      As a youngster, you knew the percentage of cool in your existence increased just by being around this person.

      Oh, and, no, you were not the cool kid. Don’t fool yourself into thinking you were. I’m sure there are some of you out there saying, “Oh, that sounds like me. I did stuff like that.”

      We are not talking about you. You are not all that cool.

      Unfortunately, neither am I. But I did go eat at Prime Cuttery earlier this week. And based on these facts, I am cooler than I was a week ago.

      Prime Cuttery is located at 3505 Country Club Road and it’s a butcher shop. No, wait. It’s a meat market, I think. Well, on second thought, it’s a restaurant. Right?

      Look, all I know is this place is a little bit of everything. People from all over the region stop by for prime cuts of anything edible. Just look at the business’ Facebook page if you don’t believe me.

      There are pictures of pork and venison sausage, bacon-wrapped boudin, Angus beef filets, stuffed rabbit, and even alligator meat. It’s clear Prime Cuttery knows what it takes to be relevant in the meat market scene in the region. And people are taking notice. Whether it’s families tailgating at a McNeese game in town or looking to impress some family members from up north, Prime Cuttery has all of the meat bases covered.

      The place is growing these days equally from its menu of daily food options. The menu hangs on the back wall behind the counter and includes a burger, poboys, sandwiches, boudin, sausage, sides and salads.

      The poboys includes classics like ham and cheese, roast beef, and shrimp and sausage. The sandwich options are chicken salad, brisket and muffalettas.

      The prime burger at Prime Cuttery is garnering its own cult following. From what I’ve been told, word of mouth has helped the place to the point where new customers will come inside with no idea what the place is about, yet they know to order the burger.

      I know this because I also did this. As did two gentlemen who were in line behind me the day I went.

      The burger comes with a patty of Angus beef mixed with pork belly that is ground fresh each day. The item can come topped with pickles, tomatoes, onions, and mayo served on a kaiser roll. Cheese, bacon, grilled onions, mustard or the jalapeno mayo can also be toppings at an extra cost.

      Let me start by saying this may have been one of the best burgers I’ve eaten in a few years. The patty was thick and had a unique amount of natural flavor. There really didn’t need to be any seasoning on the patty because it stood alone, purely due to the quality of beef Prime Cuttery uses for its dishes. The fresh vegetables and jalapeno mayo on my burger made it into something that’s hard to describe.

      All I can say is that the burger was, without a doubt, fantastic.

      The fries were your classic thin-cut versions cooked fresh and topped with a little salt and pepper. All together, my bill was about $9, a great price for something made fresh with some of the best ingredients you’ll find in Southwest Louisiana.

      So, as I said before, Prime Cuttery is the cool kid in school. The place moved into our area less than a year ago and already has a bunch of friends.

      We will never be as cool as Prime Cuttery. We all have to be OK with this fact. But that doesn’t mean we can’t feel cool just by being around the place. Go there, order off the menu and just bask in the place’s aura.

      But be chill about it. Don’t go acting like you really want to be there. That’s not a cool thing to do. And I’d know. I ate at the restaurant earlier this week and it kind of made me cool.
